Pear, Chickpea, Beet Stew

 

Pear, Chickpea, Beet Stew is a simple, flavorful and nutritious stew that is super easy to prepare because the crock pot does most of the work for you! The stew is hearty and filling and the flavors are earthy and autumny… is that a word? I don’t think so… but it should be!

Although the taste would be the same, I would not substitute red beets for the golden beets in this stew unless you are ok with a bright red stew! Save even more time (and salt!) by cooking the chickpeas in your crock pot prior to preparing this stew. I hope you enjoy it!

Instructions
  1. Add everything except the greens and black pepper to the crock pot. Cook on low for 7-9 hours.
  2. Thirty minutes prior to serving: Turn the crock pot to high, add the greens and cook until they are bright green. Season with black pepper to taste. Remove the Bay leaf.
  3. Serve over brown rice, quinoa or your favorite whole grain.
Recipe Notes

Notes: I used a 1.5 quart crock pot to prepare using the quantities listed here. The recipe can easily be doubled, but use a larger crock pot.
