Gingerbread Granola

I recently discovered Siggi’s Orange and Ginger flavored yogurt… which I really love by the way… but was looking for a granola that would go nicely with it. When I was unable to find just the right thing at the store I stumbled on this recipe online. I made a few minor modifications and voila…. Gingerbread Granola… a perfect crunchy pairing for Siggi’s Orange and Ginger Yogurt! The recipe is open to modification so you could tweak it to your taste preference.  The yogurt has 14 g of protein and the granola (as I interpreted it) includes pumpkin seeds, almonds, pecans and walnuts. Nutritious and satisfying. 🙂

Instructions
  1. Preheat oven to 325 Degrees.
  2. Mix the dry ingredients together in a large bowl.
  3. In a small saucepan over medium low heat, warm the olive oil, maple syrup, molasses, and vanilla extract. Pour over the dry ingredients and mix well.
  4. Spread mixture evenly onto a large baking sheet and bake for 15-20 minutes, stirring neat the halfway point to ensure even cooking.
  5. Once the granola is visibly browned, remove from the oven and let cool completely on the pan before storing.
  6. Store in an airtight container for a few weeks (if it lasts that long!!)
