Beans and Greens!

Happy New Year!!

I have been making this recipe for several years and to be honest I am not sure where it originally came from. Various leafy greens and dried beans could be substituted, but this combination is my favorite. The smokiness of the toasted sesame oil and the heat from the red pepper flakes really makes this dish; you can add more red pepper flakes if you like it really spicy! This is a great “go to” recipe year round and a super way to start the year with good luck! Hope you enjoy it!

Ingredients

Instructions
  1. Wash and drain the greens. Strip off the tough stems and tear leaves into 1/2" strips.
  2. Heal olive oil in a large skillet. Cook garlic and onions over medium high heat until limp. Add kale a little at a time, stirring until it wilts and turns bright green.
  3. Add the roasted sesame oil, red pepper flakes, oregano, salt and pepper.
  4. Add black eyed peas to pan with greens and stir them around to heat thoroughly.
  5. Serve over brown rice or polenta. Enjoy!
